Easy Chicken Bake

Looks weird, tastes good! I got this recipe off the back of a StoveTop Stuffing box and decided to try it. Just mix cream of chicken soup, sour cream, and thawed frozen veggies in a bowl. Cut up two chicken breasts, into bite size pieces. Make whichever flavor of StoveTop you like (I used Chicken). Put the soup/veggies/chicken into a 13x9, and top with the already prepared stuffing.

I thought that maybe the stuffing would burn since you add it to the top already cooked, but it baked up to be super crispy and good. It all turned out very "pot pie like", with the stuffing acting as the crust. We'll definitely be trying it again!

Skinny Cow...97% fat free!

Since we are both trying to drop a few LB's, this is a nice little treat for only a little over 100 calories. Much better than a scoop of ice cream, since we all know nobody ever just gets one scoop. And..these were on sale at Target, so they didn't cost an arm and a leg either.

I Love You, Man

We went to the new movie theater in our town tonight. It's been open for awhile, but we are usually the type that wait for movies to show up On Demand. I'm glad we went though, the movie was hilarious. Definitely recommend it to anyone who wants a good laugh!

The Best Day...October 18, 2008

Today I brought wedding pictures over that my mom ordered from our photographer. There are more than these three, but these are some of my favorites. She got an 11x14 of me and Anthony, to put in place of my high school senior picture....and since Tim is getting married in almost 5 months, she'll do the same with his senior picture too. Something about her doing that has made me realize that my brother and I are grown-ups...not the fact that we live on our own, or the fact that we are 24 and (almost) 26 years old. Replacing our senior pictures with wedding pictures, something about that is a big deal to me...go figure.

American Idol: Season 8

I got into American Idol later in the game, but now I'm hooked. The first season I really watched was when Taylor Hicks won, and I liked him from the beginning. Then I rooted for Chris Daughtry, and he didn't even make it into the Top 3. This season, I'm still trying to figure out my favorites. Matt Giraud is up there, and so is Kris Allen. I'm really not liking any of the girls so far...although Lil Rounds is obviously a natural.
I'll be watching every week until the end though, whether my favorites end up staying or not.

Apartment Living

Anthony and I are gradually getting tired of living in an apartment. We really love Manteca and we can't even complain about our complex...it's quiet, clean and the office staff is always really nice. There is just no room, and there are only two of us! Most of our wedding presents are at my parent's house still (we owe them big time), plus we have a storage unit down the street. I love cooking now that we are married, but this tiny little kitchen drives me insane sometimes. So, we are working on building up our savings in hopes that we can try to move by this time next year (or sooner). Now if there was just a job market for teachers....

3rd grade Math

For one hour on Mondays, I help Annette's niece Ashley with Math. When they told me I would be helping her with adding and subtracting fractions, I actually went online and gave myself a little refresher course. This was never my favorite subject in school and I don't think I would have ever passed the math sections of the CSET and CBEST (for my credential) without Anthony's help. I don't think we even learned fractions until 4th or 5th grade when I was in school, so this is some complicated stuff for a 3rd grader. During the hour, we work on homework and I bring these worksheets that I just print from online...there are so many useful websites for teachers, it makes things much easier. So far, she's doing a really great job!

We had a BBQ at my parents house to celebrate Anthony's birthday on Sunday...since we were busy Saturday evening. I made his favorite cake, German Chocolate, but this is what happens when you forget to buy candles. Holly and I came up with this algebraic version of his new age. We all need a little math in our lives sometimes, right?!

Happy Birthday Anthony!!

Today is Anthony's 28th birthday. When we met, he was 20...I was 18. I thought the fact that he was older than me was super cool. Over the last 8 years we've celebrated birthdays, holidays, weddings...but nothing is better than just celebrating the fact that we get to spend everyday together. He is the nice compared to my sarcasm...he's calm compared to my "freak outs"...he's reassuring compared to my pessimism. We balance each other out perfectly. I can't wait to celebrate more birthdays with him.

Spring is here...

Today is the first day of Spring, so I thought it would be fitting to show off the plants that my first graders are growing. We started with little dirt pods, added marigold seeds and watered them in a little tray. On Monday, we transferred them into these cups and set them in our windowsill. The students are really excited to show them off at Open House next week!

I went shopping today for my mother in law's birthday present. Her birthday was on March 14th, but we'll see her this Sunday for a bbq to celebrate Anthony's birthday. She loves butterflies, so she should love this sweater. It's short sleeved too, so she can wear it even as it gets warmer outside.

Imagine being able to look back at any day throughout the year and actually remember something that happened. Usually it seems like our days flow into one another, and by the end of the week we are stuck wondering what happened on any given day. Project 365 is a way for us to remember an entire year, through pictures. Whether they are of important events or completely random, I think it's a fun way to capture life.

So each day I'll post a picture, giving you a glimpse into my life. I must take the picture on the actual day it's posted, and I can only post one picture per day. Sometimes I'll explain, and sometimes there will be no need to. Enjoy!
